Anise Cookies

Ingredients
- 2 ¼ Cup Flour Sifted
- 2 tsp Baking Powder 2 heaping teaspoons
- ¼ tsp Salt
- 3 Eggs Beaten
- 1 Cup Sugar
- ½ Cup "Salad" Oil any regular vegetable oil
- 3 tsp Anise Extract Grandma called for 1 ½ – 2 tsp
- 3 tsp Lemon Juice Grandma called for 2 tsp. Can also use 2 tsp Lemon Extract
- Butter to grease pan

Heat oven to 350°F

In Bowl #1 sift together Flour, Baking Powder, and Salt

In Bowl #2 beat together Eggs, Sugar, and Oil. Use whisk on hand or stand mixer

Beat together contents of Bowl #1 & #2 until fluffy

Add Anise and Lemon to mixture and beat with paddle mixer….or just a big spoon, until fluffier

Place batter in the greased pan

Bake for 20-25 minutes until top is brown

Remove from oven and cool down for 10 minutes

Slice cookies as shown

Place cookies on cookie sheet and (CAREFULLY) brown under broiler on all sides
